No Venison in the Freezer!
I can't believe I'm saying this, but we're almost out of venison. I can actually see the bottom of the freezer. I'm feeling a little panicked about this, although I know it's just a matter of days before the freezer is full again. After all, Rick got 20 deer last year. 20. That's a lot of meat. We probably gave half of it away. I'm sure he'll do the same this year and soon my freezer will be full. I hope so...I have a lot of recipes to test!

20?!? How many deer are you allowed to harvest? We are in Colorado we can't get that many in a season.
Oh and BTW I know just what you mean about looking at an empty freezer just before hunting season. I always take the opportunity to defrost it when my guys leave for hunting camp. By the time they get home the freezer is ready and waiting! ]
I also can a lot of our meat as well. It is usually the last products of my canning season.

A tag in VA comes with (I think) six deer, but only two bucks. We have such a problem with over population in Northern Virginia, that hunters can get as many tags as they want! Rick is a bow hunter, so he hunts year round on damage control permits. On damage control, there is no limit. Also, our white tails out here are much smaller than the Mule deer in Colorado! It's not uncommon to only get 40 lbs of meat from one.
I just saw the comment that you can. I've never canned anything in my life...the process is scary to me (I don't know why, it just seems hard). What do you do with the canned meat?
I thought it would be hard too. But you really should consider trying it. I was surprised at how easy it is.
I can the meat cubed for things like stew, and ground for casseroles, chili, whatever.
My guys like the cubed venison in a white sauce and served with rice and a veggie. Simple and quick.

I'd forgotten how much bigger mule deer are. We just got back from a trip to GA and I saw some white tails along the road. They are really small! They sure are pretty too. My 6 yo even noticed the difference in color.

Yes, our little pee wees are much smaller than your mule deer! Although our friend got a doe the other day that would give a mule deer a run for the money...she was HUGE!
